A charming stay out of time. The Moulin de Salazar guest house welcomes you in an exceptional setting: 2 hectares of nature with a working water mill dating from the 19th century, located near Lauzerte, a medieval village classified as one of the most beautiful villages in France. This beautiful village is one of the main stops on the pilgrimage route to Santiago de Compostela. Each room is decorated in a unique way. The materials combine washed linen, tiles and prestigious earthenware, while respecting the charm and identity of our 19th century home...

The Team
Gilles Dirat was born and raised in Toulouse, France where he attended culinary school at the Ecole Hoteliere de Toulouse. After five years in New York at Le Perigord, Chef Dirat settled in Los Angeles as the head chef of the world-renowned Bistro and Bistro Garden restaurants in Beverly Hills. For six subsequent years, he was the head chef at Mistral in Beverly Hills. Since 2000, Chef Dirat has been a private chef in Los Angeles.
